Gluten Free Dairy Free Grain Free Blueberry Pie

Gluten free recipes can be finicky.

Luckily, Allie has and continues to refine her recipes and processes so you don't have to. Pie crusts, muffins, cookies, and breads come out so good you'll want more.

Try this Gluten Free Grain Free Dairy Free Blueberry Pie !
Adapted from Healing Foods p.173

Pie Shell:
3 cups Almond flour
1/2 tsp baking soda
1/4 tsp celtic salt
1/4 cup cold/diced coconut oil [Nutiva]
2 Tbl raw honey
1 local egg

Mix first three ingredients. Add the rest of ingredients until well combined. Flatten dough and refrigerate for 30 minutes. Roll out 2/3 dough between paper. Press into pie dish. Bake until golden brown.

Filling:
2 lb frozen blueberries [hand picked and frozen in Alaska]
1.5 lbs apples [from Alaska farm and frozen]
1/3 cup lemon juice [Santa Cruz Organics]
3/4 cup raw honey

Combine ingredients in large pot and boil. Reduce heat and cook 20 minutes or until thickened. Add Tapioca if you need it a little thicker. Let cool 3-4 hours or overnight. Once set, fill pie crust with mixture. Cover pie with remaining dough. Brush top with egg yoke. Bake 15 minutes @ 370 degrees F.
